Mince Pie Cookies

Ingredients

12 cookies

Pastry 

120g margarine or butter

210g flour (wheat)

2 tbsp icing sugar

A pinch salt

60ml water

Filling

2 tbsp sultanas

1tbsp raisins

2 tbsp currants

1tsp mixed peel

1/2 tsp cinnamon

1 tsp brown sugar

A pinch of lemon and orange zest

1/4 chopped apple

How to Make

  1. For the pastry. Weigh the flour into a bowl.

  2. Melt 20g of butter and place the remaining 100g into the flour. Rub the butter into the flour, leaving a few lumps of butter in the mixture, then add the icing sugar and salt.

  3. Add enough water to make a smooth pastry. Allow to rest while you make the filling.

  4. Mix together all the filling ingredients and add the melted butter.

  5. Divide the pastry into 12 even sized balls flatten with your hand until you have a thin circle. 

  6. Place a spoonful of the filling in the middle, take the edges of the circle and draw the pastry over the filling to form a purse and seal. Roll the cookie back into the shape of a ball. Flatten and press with a fork. Place on a lined baking tray.

  7. Bake the cookies  at 190 ℃ for 15- 20 mins until golden then dust with icing sugar
