Broccoli, Prawn and Feta Frittata

How to make

  1. Break the broccoli into slam florets

  2. Lightly beat the eggs and milk, season

  3. Break the feta into small pieces and finely chop the spring onion

  4. Heat the oil in a frying pan on the stove on a medium heat

  5. Preheat the grill to a high temp

  6. Add the broccoli, to the frying pan and stir fry for approx 4 mins until just starting to colour then add prawns, parsley and spring onion.

  7. Add the egg mixture and stir until lightly set but still runny.

  8. Add the feta and and sprinkle with cheddar

  9. Place under the grill until golden approximately 4-5 mins

Serve with salad
