Pecan and Salted Caramel Cookies

Ingredients

110g  melted butter

140g soft brown sugar

40g caster sugar

170g   plain flour

1/4 tsp salt

1/2 tsp baking powder

1 egg

1 tsp vanilla

12 caramel sweets

36 pecan nuts

How to make

  1. Place the melted butter in a bowl

  2. Add both sugars, beat well with a wooden spoon.

  3. Add the vanilla and egg.

  4. Add the baking powder, salt and flour.

  5. Chill for 30-40 mins.

  6. Place a large spoon of the mix on a tray lined with baking paper 5 cm apart.

  7. Smash the caramel in to pieces, break the pecans nuts in half arrange on top of the cookie dough mound.

  8. Bake at 185℃ for 10-12 mins.

  9. Allow to cool on baking tray before moving to a cooling rack.
