Pot of Noodles

Ingredients for 1 portion

1 nests fine rice noodles

1/4 vegetable stock cube

A selection of veg carrot, mangetout, mushrooms, peas (defrosted), spinach or spring greens

1/2 spring onion

1/4 tsp grated fresh ginger

A pinch of dried garlic

Squeeze of lime

A dash of soy sauce

Boiling water

 

How to Make

Takes just 15 mins

  • Place a ¼ of a crumbled stock cube into a container or pot with a tight fitting lid.

  • Prepare your chosen vegetables peeling and chopping them to small pieces. Place in your pot.

  • Thinly shred or snip with scissors half a spring onion

  • Grate ¼ tsp fresh ginger into the pot

  • Add a pinch of dried garlic powder.

  • Add 1 nest of noodles to the pot.

  • When you are ready to eat, pour enough boiling water to cover the noodles and place the lid on the pot, leave for 5 mins then stir.

  • Place the lid back on the pot and leave for 3 mins further.

  • Add a dash of soy sauce and a squeeze of lime.

Grab a fork and enjoy!
