Teriyaki Chicken or Aubergine with Oriental Beans

Ingredients

1 1/2 tsp cornflour

Salt and pepper

1 tsp chopped ginger

4 tbsp soy sauce

2 tbsp water

2 tbsp brown sugar

2 cloves garlic

1 tbsp honey

1 tsp sesame oil

1 tbsp mirin ( optional)

600g mini chicken breasts fillets or 2 aubergine and 2 red peppers

200g green beans


How to Make

Serves 4

  1. Mix the water, cornflour, soy sauce, sugar, ginger, honey, oil ,

  2. Add 2 tbsp to the chicken or aubergine an peppers and marinate 30 mins 

  3. Add sauce to a saucepan and cook until thick and reduced

    remove from the pan.

  4. Add a little oil to the pan and add the chicken stir until cooked through then add a little of the reduced sauce.

  5. Meanwhile rub the beans a little oil, bake at 180℃ for 5 mins, remove from the oven and sprinkle with sesame seeds, return to the oven for a further 5 mins.
